Pin boning

The pinbones goes from the backbone into the fillet.  In order to get a boneless fillet the pinbones must be cut out or pulled out.  Pulling the pinbones are preferred because the fillet is "whole" and not cut into and damaged and will have a higher value.  However pulling the bones depend on the type of fish, how fast the bones are attached to the meat and the maturity of the fillet.

Salmon and trout fillets has traditionally been pin boned by pulling the pin bones.  The first mecanical pin boner was developed by Trio FTC in 1986.  Today much of the pin boning of trout and salmon is done automatically by machines.

However, fish like cod, saithe, haddock, hake and mackerel can be pin boned using Ergolight hand held machine.

    Trio has developed a unique patented method to make pin boning of salmon fillets possible shortly after slaughtering.  The fillets are manually positioned in two lanes and fed into the machine. 

    Trio has developed a patented method of pin boning salmon fillets immediately after slaughtering. 

    Three major tests carried out by SINTEF at Frøya and Hjelmeland in Norway in 2007 and 2009 gave a result of an average of about 2 broken bones in the fillets. The tests show that it is possible to produce boneless fillets in line immediately after slaughtering. 

    The result is lower processing and handling costs, increased shelf life and better quality of the salmon products.

    Trio has developed;

    • a line for automatic feeding and vision system to see the line of bones

  • Trio FDS 2000 PB

    The FDS 2000 PB removes pin bones from salmon fillets and skin the fillets automatically in one operation.

    Pin bone removal

    The fillets are fed with skin side down on top of the cold drum.  Gravity helps to freeze the fillets to the drum. 

    The Trio FTC pin bone removal system gently pulls the pin bones out of the fillets. 

    After pinboning a rotating band knife separates the fillets from the skin.

    The main advantages with the FDS 2000 PB are:

    • The fillets on the curved drum presents the bones to the pin boners for improved grip and minimum loss of meat.
    • A vacuum system ensures little water and bones on the fillets.
    • The capacity is up to 30 fillets per minute depending on how mature the fillet is
    • The machine saves labour by integrating two operations in the same machine
    • The machine may be used a skinning machine only

    Skinning

    The machine can be operated as a skinning machine only. A rotating bandknife cuts the skin from the fillet. The depth can easily be adjusted from shallow skinning to deep skinning.

    The capacity is about 60 fillets per minute.

  • Trio FTC PBR Ergo-Light
