Skinning

All Trio skinning machines are based on the Trio patent that revolutionized the fish processing industry; Freeze Drum Skinning.

The bandknife separates the filet from the skin and the skin is scraped off the drum

 

A rotating drum is filled with a cooling liquid. When the fillets are placed onto the rotating drum, the skin surface freezes on the drum. A rotating band knife then cuts the fillet away from the skin. The fillet fall down on a conveyor and the skin is scraped off the drum.

The FDS machines slice the skin off the fillets in a very gentle manner. No strain is put on either the skin or the meat of the fish. This is particularly advantageous when: 


 *     Deep skinning and removal of dark meat

 *     Skinning of fillets with no natural division between skin and meat such as mackerel 
     
 *     Skinning of soft fillets, or fillets with weak skin

 *     Skinning of flatfish with no splitting of tail 

 *     Skinning of butterfly fillets such as Sardines

  • Trio FDS 105

    FDS 105 Skinning Machine is a flexible all round machine for the small and medium size processor.

     

    Shallow and deep skinning

    The fillets are placed skin side up on the string conveyor belt. As the fillets pass under the cold drum the skin freezes to the drum. The freezing is only on the skin surface. A rotating band knife cuts the fillet away from the skin, and the skin is then scraped off the drum. The fillet is skinned without causing any strain on the fish meat or the skin.  The thickness of the cut, i.e. the depth of the skinning, is infinitely adjustable between 1 - 12 mm.

    Refrigeration

    The refrigeration system operates on a system of indirect cooling. A sealed refrigeration unit cooles down a secondary cooling medium. The cooling medium is then transported to the rotating drum and cools the surface of the drum to below freezing point. This system requires little service and is simple to operate. 
     

     

     

  • Trio FDS 105 DM2

    The FDS 105 DM2 is a skinning machines especially suitable for removing dark meat on salmon, trout, saithe etc

    Shallow and deep skinning

    Defattening

    When defattening, the machine cuts deeper along the centre fat line. The fillets are placed on the infeed conveyor with the centre fat line on top of the marked conveyor cords. The fat line is then pressed into a groove in the drum and the knife cuts across and cuts deeper into the centre fat line.  The result is deeper skinning along the centre of the fillet and more shallow and more red meat on the sides. 

    The freezing drum is extra wide to allow the option of standard FDS skinning and DM defattening side by side.

    Refrigeration

    The refrigeration system operates on a system of indirect cooling. A sealed refrigeration unit cooles down a secondary cooling medium. The cooling medium is then transported to the rotating drum and cools the surface of the drum to below freezing point. This system requires little service and is simple to operate.

  • Trio FDS 2000

    Trio FDS 2000 skinning machine is particularly suitable for skinning fillets from large fish like salmon and trout.  The fillets are fed with skin side down and the skin is pressed/freezes against the top of the drum for best skinning results.

    The FDS 2000 Skinning Machine

    The FDS 2000 Skinning Machine is more advantageous when skinning large fish fillets. The fillets are fed on the cold drum from the top. The skin surface "freezes" on the drum through a combination of gravity and pressure. A rotating band knife cuts the fillets away from the skin and the skin is scraped off the drum. The thickness of the cut is easily adjustable. The freezing is only on the surface of the skin.

    The main advantages of the machine are:

    • All of the skin surface is flat against the drum through gravity.
    • Pressure can be adjusted to help press the skin surface flat on the drum.
    • The drum is wide enough for two large fillets side by side.
    • The capacity is about 80 fillets per minute.
    • Extra cutting, vertical or horizontal, can be added to the machine.

    Refrigeration

    The refrigeration system operates on a system of indirect cooling. A refrigeration unit cools down a secondary cooling medium. The liquid is then transported to the drum and cools the surface of a rotating drum to below the freezing point.

    The system can be hooked up to a central refrigeration system in the factory.

    Advantages of the FDS system

    The machine is able to skin many types of fish, different qualities and with different yield. The band knife can be infinitely adjusted to cut the skin from 0 to 25 mm deep. The unique "freezing" to hold the fillet, ensures that no strain is put on the fillet and makes it possible to skin fillets with soft meat and weak, thin skin.

  • Trio FDS 2000-2

    FDS 2000-2 Skinning Machine has two knives for making one horizontal cut in addition to the skin cut. The fillet can be cut/divided horizontally to reduce fillet height/thickness or to recover dark meat.

    The FDS 2000-2 skinning machine has two knife sections which will skin the fillet and divide it horizontally in one operation.

    The machine allows you to:

    • Divide fillets horizontally in two, 
    • Recover the "fat layer" when deep skinning.
    • Skin and deep skin

    The second knife makes it possible to recover the "fat layer" when deep skinning. Normally the meat left on the skin will go to waste, which may constitute up to 4-8% of the fillet weight.

    Skinning

    The FDS 2000 Skinning Machine is more advantageous when skinning large fish fillets. The fillets are fed on the cold drum from the top. The skin surfaze "freezes" on the drum through a combination of gravity and pressure. A rotating band knife cuts the fillets away from the skin and the skin is scraped off the drum. The thickness of the cut is easily adjustable. The freezing is only on the surface of the skin.

    The machine can be supplied with drum with one or more grooves for DM skinning.  

    Refrigeration

  • Trio FDS 3000

    Trio FDS 3000 skinning machine is a newly developed skinning machine freezing the fillets to the drum from the top. It is suitable for skinning large, soft uneven whitefish fillets, salmon fillets or portions.

    The FDS 3000 skinning machine is a recently developed skinning machine suitable for skinning soft trimmed whitefish fillets or portions.  The fillets are fed on top of the drum and "freezes" flat on the drum by gravity and and light pressure.  It is possible to skin very shallow without putting pressure or strain on the fillet or skin.
     
    The machine is normally used with manual feeding.  The capacity is 40 - 120 fillets per minute, depending on fillet size.

    Function of the machine

    The machine operates on the principle that the skin of the fillet freezes to the cold, rotating drum, and is thus held in position. (The freezing is approx. 1/10mm deep.) A rotating bandknife cuts the fillet away from the skin, and the skin is then scraped off the drum. The thickness of the cut, and thus the depth of the skinning is infinitely adjustable between 0-12mm. Fillets are sliced away from the skin without putting any strain on the fish meat or skin.

    FDS skinning is particularly advantageous when:

    • Deep skinning
    • Skinning large fillets with varying thickness 
    • Skinning portions 
    • Skinning of fillets with no natural division between skin and meat
    • Skinning of soft fillets or fillets with weak skin
    • Skinning of flatfish for maximum yield and no tail splitting

    The FDS 3000 is designed on a substantial steel frame made from 18/8 stainless steel. All parts that come into contact with the fish are made from stainless steel and plastic.  

    The machine has an integrated cooling system, but can also be supplied for connection to a main freezing plant, either based on freon or Ammonia.

       

     

  • Trio FDS 35

    The Trio FDS 35 Industrial skinning machine is the latest model of famous Trio FDS skinning machine.  Improvements in design will increase yield by 2-5% compared to older Trio skinning machines.

    The FDS 35 is the new industrial scale freeze drum skinning machine from Trio. The new Trio FDS 35 Industrial skinning machine will increase yield by 2-5% compared to older Trio skinning machines.  The new design is more hygienic and makes the FDS 35 skinning machine easier and safer to operate and service.

    The machine has an integrated cooling system, but can also be supplied for connection to a main freezing plant, either based on freon or Ammonia.

    Conveyor length and design can be adapted to customers’ process.  The machine can be supplied with conveyor for easy switching between skin-on and skin-off production.

  • Trio FDS 55

    Trio FDS 55 skinning machine is a high capacity skinning machine designed to stand in line with high speed filleting machines from Baader and VMK

     

    The new FDS 55 is a new improved skinning machine built for high capacity skinning.  It has anodized aluminum alloy drum for better heat transfer and the drum/conveyor runs about three times faster than the FDS 35.  The machine can run in line with high speed filleting machines for whitefish and pelagic fish with direct transfer from the filleting machine.

    Compared to older versions of the FDS 5N, this machine has clear advantages; 

    • New knife system increases yield by 2-5%
    • New design for better hygiene and easier service
    • New and improved bearing system on drum.
    • Running the product through the machine without skinning
    • Choice between electric or hydraulic motors

    The FDS 55 is designed on a substantial steel frame made from 18/8 stainless steel. All parts that come into contact with the fish fillet are made from stainless steel or plastic.

    Function of the machine

    The fillets are transferred automatically from the filleting machine to the conveyor belt on the Trio FDS 55. The belt passes under a rotating refrigerated drum and the skin of the fillet "freezes" to the drum. The freezing is very superficial and not deeper than 1/10mm.

    A rotating bandknife cuts the fillet from the skin and the skin is scraped off the drum.  The thickness of the cut or the depth of the skinning, is infinitely adjustable between 0 - 12mm. 

    The machine has an integrated cooling system, but can also be supplied for connection to a main freezing plant, either based on freon or ammonia.

  • Trio FDS 5NS

    Trio FDS 5NS skinning machine is a high capacity machine for skinning on board factory ships.  The machine can be put in line with high speed Baader filleting machines with automatic feeding.

     

    The FDS 5N-S is the marine version of a high capacity skinning machine, built for direct connection to modern high speed white fish filleting machines such as Baader 182, 192 or 212 or VMK or Baader pelagic filletting machines. The FDS 5N-S can skin up to 300 pollack or mackerel fillets per minute.  The machine has a number of advantages compared to older machines:

    • The new, sturdy frame is made in stainless steel and other non-corrosive materials.
    • The conveyors are adapted to automatic transfer from filleting machines, and can be fitted for easy switches between skin-on and skin-off production.
    • The special aluminum alloy freeze drum gives more efficient transfer of cooling, and more capacity.
    • The new knife section secure more stabile operation, longer life for the band knife, faster replacement and less maintenance.

    The machine can be supplied with a dedicated refrigeration system or connected to the main main refrigeration plant on board, and can be supplied for connection to R-22 or ammonia. The machine needs 6000-9000 kcal at -30°C.
