
TheTrio Horizontal Slicer was the first automatic slicer for soft fish fillets allowing fillets to be sliced horizontally; parallel to the skin. Machines are in operation in Spain, France, Italy, Belgium and Norway where slices are turned into a variety of value added fish products.

The thickness of the slices can be pre-programmed to slice the fillets at various thicknesses at defined sequences. The slices can be set as thin as 1 mm depending upon texture of the fish fillet. The slicer can be used on fresh fillets as well as smoked fillets.
The basis for the machine is the unique "freeze drum" principle developed by Trio. The skin of the fillet is frozen to the drum thus holding it in place. A rotating band knife cuts slices from the fillet. For each new slice the knife moves in towards the drum. The machine can divide horizontally the fillet in two, or it can cut several slices.
The capacity of the machine is up to 30 cuts per cut per minute. Several fillets can be sliced at the same time.
The advantages of the horizontal slicing principle are several;
- slices can be cut the whole length of the fillet (i.e. smoked salmon)
- slices or fillets can be cut at an even thickness before portioning.
- fillets or slices which are thinner and have even thickness means faster freezing, more controlled thawing and cooking.
- slices or fillets without pin bones can be cut from fresh fillets.
