Slicing

Trio can slice soft fish fillets horizontally and vertically without damaging the slices.    

Trio FDS slicers will slice fillets horizontally with a bandknife and skin while the fillets are "frozen" to the cold drum.  The thickness of the slices are adjustable from 1 - 25 mm

The Trio FTC slicers will slice fillets verticallly or at an angle with oscillating knives.

  • Trio FDS 105 HS

    Trio FDS 105 HS horisontal slicer can slice fish fillets horizontally and skin on one operation.  The thickness of the individual slices can be programmed.  

     

    TheTrio Horizontal Slicer was the first automatic slicer for soft fish fillets allowing fillets to be sliced horizontally; parallel to the skin.  Machines are in operation in Spain, France, Italy, Belgium and Norway where slices are turned into a variety of value added fish products.

    The new slicer has a number of advantages;

    The thickness of the slices can be pre-programmed to slice the fillets at various thicknesses at defined sequences.  The slices can be set as thin as 1 mm depending upon texture of the fish fillet. The slicer can be used on fresh fillets as well as smoked fillets.

    The basis for the machine is the unique "freeze drum" principle developed by Trio. The skin of the fillet is frozen to the drum thus holding it in place. A rotating band knife cuts slices from the fillet.  For each new slice the knife moves in towards the drum. The machine can divide horizontally the fillet in two, or it can cut several slices.

    The capacity of the machine is up to 30 cuts per cut per minute. Several fillets can be sliced at the same time.

    The advantages of the horizontal slicing principle are several;

    • slices can be cut the whole length of the fillet (i.e. smoked salmon)
    • slices or fillets can be cut at an even thickness before portioning.
    • fillets or slices which are thinner and have even thickness means faster freezing, more controlled thawing and cooking.
    • slices or fillets without pin bones can be cut from fresh fillets.

  • Trio FDS 2000-2

    FDS 2000-2 Skinning- and Slicing Machine has one knife in addition to the skinning knife.  The top knife can be set to recover dark meat or to divide the fillet horizontally in two.

    The FDS 2000-2 skinning machine has two knife sections which will skin the fillet and divide it horizontally in one operation.

    The machine allows you to:

    • Divide fillets in two, horizontally.
    • Recover the "fat layer" when deep skinning.
    • Skin and deep skin

    The second knife makes it possible to recover the "fat layer" when deep skinning. Normally the meat left on the skin will go to waste, which may constitute up to 3-5% of the fillet weight.

    Skinning

    The FDS 2000 Skinning Machine is more advantageous when skinning large fish fillets. The fillets are fed on the cold drum from the top. The skin surfaze "freezes" on the drum through a combination of gravity and pressure. A rotating band knife cuts the fillets away from the skin and the skin is scraped off the drum. The thickness of the cut is easily adjustable. The freezing is only on the surface of the skin.

    The machine can be supplied with drum with one or more grooves for DM skinning.  

    Refrigeration

    The refrigeration system operates on a system of indirect cooling. A refrigeration unit cools down a secondary cooling medium. The medium is then transported to the drum and cools the surface of a rotating drum to below the freezing point.
